- sprinkle with toasted peanuts and fried shallots
- green papaya, pickled carrot, mint, basil, cilantro, shallot, chopped lime, roasted peanuts, lime juice, palm sugar, fish sauce
- makes 15 cups
- peel, seed, and quarter a large green papaya store in refrigerator. Run each quarter through a mandolin to shreds. Julienne 3 carrots and quick pickle in 2 cups sugar dissolved in 2 cups white vinegar overnight. Soak one small puck of palm sugar in juice from 3 limes.
- toss together drained pickled carrots, green papaya, 2 finely chopped shallots, 2 finely chopped limes (with peel and rind), 1 cup chopped cilantro, 1/2 cup chopped mint, 1/2 cup chopped basil. Add 3 tablespoons fish sauce to palm sugar sweetened lime juice. Dress salad evenly and adjust seasoning. Served with fried shallots and roasted chopped peanuts.
