- quinoa, apricot, cranberry, figs, dates, currants, almond, mint, parsley, cilantro, orange juice, orange zest, olive oil, pomegranate molasses, smoked paprika, cinnamon, ras el hanout, salt, pepper
- 3 cups of dried quinoa cooked in 6 cups of water. Drain. Toss with 1/2 cup each of dried apricot, figs, dates, currants, 1 cup of dried cranberries, 2 cups toasted chopped almonds, 1/2 cup each of herbs (parsley, cilantro, mint). Whisk vinaigrette of zest & juice of 1 large orange, 3 tablespoons pomegranate molasses, 6 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoons each of cinnamon, smoked paprika, and ras el hanout. Toss everything together and adjust seasoning.
